Three Hearts recently opened in Tacoma’s Hilltop neighborhood and is offering the relaxed atmosphere of a coffee shop alongside scratch-made pastries, sourdough loaves, and desserts in addition to a thoughtfully crafted menu of nostalgic, chef-driven brunch and lunch favorites. 

This is a story about friends uniting to pursue their passions. Co-owners Jeff Hellis (who serves as the pastry chef); his wife Maggie Hellis (who is the social media and interior plant and terraria guru); Will Eder (the coffee, beverage, and bread expert); and his wife, Jenah Garrett, have created a space that makes it easy for customers to become regulars.

With the help of comforting eats from sweet and savory Dutch babies to mouthwatering sandwiches such as the chimichurri steak with sauteed shitakes and pickled Fresnos on a baguette, Three Hearts is building a community through delicious food.

The gentlemen, both Wooden City alumni, brought in alumnus Jordan Mason to be their executive chef.

“We believe in what we’re doing and want to be adaptable, but also stay true to our concept,” said Hellis. “We hired Jordan because we wanted to share him with the world. You walk in and you get to experience Jordan’s cooking, and that makes us happy. Then, you get to experience (Will's) coffee and beverage world knowledge, and a pastry chef, and that makes us happy. We are looking forward to sharing that with the community.”
